The reason why a sieve is used for Kalburabastı dough is,to shape the dessert.
Although Kalburabastı dessert seems difficult to prepare due to the shape from which it gets its name, it can be made very easily once you have a metal or wicker griddle at hand.
The following tools can be used to shape Kalburabastı dessert:
griddle (grain strainer type kitchen utensil);
plastic or metal grater back;
Special griddle patterned mold.
If you do not have a griddle device at home, the dough can be shaped by rolling it on a grater or by making scratches on it with the help of a knife.
