   There are several reasons why hamburger meat may be pink:

   • myoglobin protein. The red color of meat is caused by the myoglobin protein combining with oxygen and turning into oxymyoglobin.
   • Nitrate and nitrite contamination. These substances may cause pink discoloration.

   Additionally, in some cases, the pink color can be achieved with ingredients such as natural food dyes or beets.
