Early harvest olives are generally used in cold-pressed olive oil..
Early harvest refers to the period when olives are harvested when they are not yet fully ripe and have a green color and a bitter taste. These olives contain high polyphenol rate, aromatic components, antioxidant properties and rich nutritional values.
For cold-pressed olive oil production, olives are mostly collected in October and November before they fall to the ground. On the day it is collected, it is passed through stone mills with its seeds.
