For boiling: juice of half a lemon, one small onion, 2 cloves of garlic, 6 glasses of water;
For the dressing: one egg yolk, 2 tablespoons of flour, 4 tablespoons of yoghurt, juice of half a lemon, a teaspoon of salt;
For serving: half a tea glass of vinegar, 4 cloves of garlic.
How to make:
Add enough water to cover 1 kilogram of well-cleaned tripe and boil for about 40 minutes until the tripe becomes soft.
After the tripe is boiled, transfer it to the bowl with the help of a colander.
Melt 3 tablespoons of butter in a separate pan, add 3 tablespoons of flour and fry until the smell of the flour disappears.
Add the filtered and warmed boiling water to the pan little by little.
To prevent the flour from clumping; Mix quickly with the help of a whisk.
Slowly add this mixture into the pot in which you boiled the tripes, stirring constantly.
To prepare the seasoning of the soup; Mix 4 tablespoons of yoghurt, 2 tablespoons of flour, 1 teaspoon of salt, 1 egg yolk and the juice of half a lemon in a separate bowl.
After warming the seasoning mixture with boiling water, add it little by little to the soup pot and mix quickly.
Finally; Add the boiled tripe to the soup and cook over low heat, boiling for about 15 minutes.
After grating the garlic, mix it with vinegar.
Serve the soup in serving bowls hot with the addition of garlic vinegar.
