  1. Ingredients needed to make karnıyarık:
    • 6 medium sized eggplants;
    • 3 tablespoons of olive oil;
    • 1 large onion;
    • 2 green peppers (for stuffing);
    • 350 grams of minced meat;
    • 2 cloves of garlic;
    • Half a teaspoon of pepper paste;
    • Half a teaspoon of tomato paste;
    • 1 teaspoon of salt;
    • 1 teaspoon of black pepper;
    • 2 tomatoes;
    • 6 medium sized green green peppers;
    • 1 handful of parsley.
    Karnıyarık recipe:
    1. Wash the eggplants in plenty of water, peel them in pajamas, and keep them in salt water.
    2. Heat 3 tablespoons of olive oil in a pan.
    3. Add the onion you chopped and fry until it turns pink.
    4. Add chopped green pepper and continue roasting.
    5. Add the minced meat and cook it with the roasted onions until it takes color and absorbs its water.
    6. Stirring in between and continuing the cooking process, respectively; Add garlic, pepper paste, tomato paste, salt and black pepper.
    7. Add the diced tomatoes, cook for 5 minutes, then reduce the heat and add the chopped parsley and stir.
    8. Fry the eggplants after soaking them in salt water and removing the bitterness.
    9. Place in an ovenproof dish.
    10. Cut the middle parts of the eggplants and add the filling generously.
    11. Add cherry tomatoes and pepper slices on top.
    12. Bake in a preheated oven at 170 degrees for 20-25 minutes.
    Karnıyarik can be served with buttered rice pilaf.
