There are several reasons why lentil soup in restaurants is smooth:
Blender usage. In restaurants, it is important to blend the soup to avoid lumps.
Filtering with cheesecloth. Some restaurants obtain a smooth consistency by straining the soup with cheesecloth in addition to using a blender.
Flour is roasted thoroughly and does not form lumps. Flour should be thoroughly roasted in butter with a whisk and make sure that there are no lumps left.
Control of water amount. Adding a little water results in a thick and thick soup.
Washing the lentils thoroughly. Lentils should be washed thoroughly to remove excess starch and dust.
