    Some local pita varieties in Türkiye:
    • Bafra Pita (Samsun). It is made with cheese or minced meat, covered.
    • Surmene Pita (Trabzon). Local pickled cheese and butter are placed into the dough, which is rolled out by hand.
    • Kır Pita (Kastamonu). It is also made with tahini, cooked in an electric oven rather than a stone oven.
    • Yenipazar Pita (Aydın). It is opened completely by hand and served with orange on the side.
    • Develi Cıvıklısı (Kayseri). It is made with specially prepared meat.
    • Cantik (Bursa). It is considered as the leavened version of Lahmacun.
    • Sherbet Pita (Aksaray). A special sherbet is poured on it.
    • Tavas Pita (Denizli). Tahini is added to the dough, honey and walnuts are sprinkled on it.
    There are also pita varieties from different regions such as Trabzon oily pita, Nazilli pita, Gökçeada cicirya pita and Konya knife ara pita.
